After carefully studying the flavor profile of over 50 different herbs, master distiller and blender Kimio Yonezawa chose to combine 3 traditional products from Europe with 5 uniquely Japanese products - all from small local producers and distilled separately to preserve their character.

Kaikyo Distillery
The Yonezawa family has been active as a sake brewer for more than 150 years. The distillery does not have such a long history, but recently also celebrated its centenary. As a result of this festive event, it was decided not only to distill shochu, but also to start producing gin. The distillery was named after the Aksashi-Kaikyo Bridge, one of the longest bridges in the world, which lies right in front of the distillery.
