Producer
Sogen
The Sogen brewery was founded in 1768, making it the oldest brewery in Ishikawa prefecture, and one of the oldest breweries in all of Japan. The brewery was thus one of the founders of the Noto toji guild, the local association of sake brewers whose students would spread out across all of Japan spreading the knowledge and techniques developed on the Noto penninsula. The current brewmaster of Sogen, Yukio Sakaguchi started working in the brewery when he was only 15 years old, and has build an impressive experience over the past 40 years, reflected in exceptional sake.
