A sake that announces the coming of spring! Quite noticeable floral notes, soft in style yet still not without a touch of freshness thanks to the use of Omachi rice as well as the Kimoto brewing method. Very versatile, but you can only do it true justice in combination with a pure, vegetarian cuisine.

Amabuki was founded in 1688 in the prefecture of Saga, located on the southern island of Kyushu. The brewery has thus been in operation for 330 years. Throughout this long history, it has always stayed true to its ideals of forging a close connection to nature and protecting the environment. The water used comes from the Seburi mountains, and contrary to most breweries, who source their rice from dedicated suppliers, Amabuki cultivates various rice varieties itself. They furthermore chose not to use the yeast cultures provided by the Brewing Society of Japan, opting for flower blossom yeast instead. These give a wonderful aromatic intensity to the sake produced, contributing to its unique character.
